1 ripe banana
1 tsp vanilla extract
110g brown sugar
225g Healthy Baker self-raising flour
For the sauce
60g golden syrup
110g soft brown sugar
Preheat oven to 180°C or 160°C fan-forced. Place butter into mixing bowl and melt 2min/100°/speed 1.
Lightly brush four 1 ¼-cup (325ml) capacity ovenproof dishes with a little of the melted butter. Add banana, egg, milk and vanilla extract to melted butter in mixing bowl and blend 20sec/speed 8. Add sugar and flour and combine 40sec/speed 4.
Spoon into prepared dishes. Combine water, golden syrup and sugar in mixing bowl. Cook for 2 min/100°C/speed 1. Pour over puddings. Bake in oven for 30-35 minutes or until firm to the touch. Serve with ice-cream.
Note: you can make this using six ¾-cup/185ml capacity dishes for slightly smaller portions.
