Sticky Banana Puddings
We think everyone needs a banana bread recipe in their repertoire. This one is amazing and incredibly simple to make.

2 very ripe bananas
185g caster sugar
120g light olive oil or sunflower oil
2 eggs, at room temperature
1 tsp natural vanilla extract or essence
150g Healthy Baker self-raising flour
2 tsp ground cinnamon
1 just ripe banana, sliced in half lengthways
Preheat the oven to 180°C/160°C fan-forced. Lightly spray a 4 cup/ 1 litre capacity loaf tin with oil and line with baking paper.
Roughly break bananas into mixing bowl and blend 5 sec/speed 6. Add sugar, oil, eggs and vanilla and mix 20 sec/speed 4. Scrape down sides of bowl. Add flour and cinnamon and combine 20 sec/speed 4.
Spoon the mixture into the prepared loaf tin. Top with the sliced banana, cut side up
Bake in preheated oven for 50-55 minutes or until golden and cooked with tested with a skewer. Set aside in tin for 5 minutes before turning out onto a wire rack to cool. Serve warm or at room temperature.
Note: if you have over ripe bananas you can freeze them to use in this banana bread. Place them in the freezer with their skins on. When you are ready to bake, just defrost.
