Oat, Honey and Raisin Biscuits

Ingredients

  • 150g butter softened
  • ¼ cup honey
  • 1 ¼ cups The Healthy Baker Self Raising Flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon bicarbonate of soda
  • ⅔ cup raw sugar
  • 1 cup rolled oats
  • ⅔ cup raisins

Instructions

Preheat oven to 150ºC. Line 2 large baking trays with baking paper.

Place butter and honey in a small saucepan. Stir over a medium heat until butter has melted. Set aside for about 30 minutes to cool slightly.

Sift flour, cinnamon, ginger and bicarbonate of soda into a large bowl. Stir in sugar, oats and raisins. Pour in butter and stir to combine.

Place a tablespoonful of mixture onto a prepared tray, then flatten to about 1cm thick.

Continue with remaining mixture, leaving about 3cm between each biscuit to allow for spreading.

Bake for 12 minutes, or until golden brown, swapping tray positions halfway through baking time.

Cool on trays for 10 minutes, then transfer to a wire rack to cool completely.
